Instant Pot Okra Gumbo

Instant Pot Okra Gumbo (Shared with love from Amy and Jackie)
A shortcut gumbo that still gets that deep, slow-simmered flavor — perfect for using up okra, peppers, and whatever's left in the crisper drawer.
Ingredients
3 tbsp oil (or butter)
3 tbsp flour
1 onion, diced
1 bell pepper, diced
2 celery stalks, diced
3 cloves garlic, minced
1 lb andouille sausage, sliced (or sub smoked sausage)
1 lb shrimp or chicken (or both, optional)
2 cups sliced okra
1 can diced tomatoes
4 cups chicken or vegetable stock
1 tsp smoked paprika
1 tsp Cajun seasoning
1 bay leaf
Salt and pepper to taste
Cooked rice, for serving
Instructions
Set the Instant Pot to sauté. Add the oil and flour, whisking constantly to make a roux — cook until it turns a deep peanut-butter brown, about 8–10 minutes. Don't walk away; it burns fast at the end.
Add the onion, pepper, celery, and garlic. Sauté 3–4 minutes until softened.
Stir in the sausage, okra, tomatoes, stock, paprika, Cajun seasoning, and bay leaf.
Seal the lid and cook on high pressure for 15 minutes. Quick-release when done.
If using shrimp, stir it in after releasing pressure and let it cook in the residual heat for 5 minutes.
Remove the bay leaf, taste and adjust seasoning, and serve over rice.
Farm note: our okra holds up beautifully in this - good texture and flavor. My favorite use of okra in the winter months. You can pre-cut your okra and freeze for later use!
